Perfect Rice Every Time

Until recently, I was lousy at cooking rice. I used to cook it on the stovetop and mountains of starchy white foam would bubble over and create a big mess on my pot and on my stove. But that wasn't the worst part. My rice took on the form of the pot in a big, sticky glob. NOT what I envisioned as the perfect side dish for my meal.

Now that we're eating mostly plant-based foods, I needed to learn how to cook rice, as it was included in a lot of new recipes I wanted to try. Thank goodness for YouTube! I learned this amazing trick that I wish I had known many, many years ago... but better late than never! And if your rice sounds anything like my rice used to, then keep reading.

How to make perfect rice every time:

1) Scrub your hands with soap and water.

2) Measure out your rice into a large bowl.

3) Fill the bowl with room temperature water.

4) Reach in there, scoop up some rice and vigorously rub your hands together.

5) Keep scooping up rice and rubbing together until the water is murky.

6) Drain the water.

7) Fill the bowl with fresh water.

8) Repeat this process until the water is clear.

9) Cook rice as directed.

I like to cook my rice in the Instant Pot. I spray the pot lightly with avocado oil spray, dump in the washed rice, water (equal parts of rice/water - I usually cook 3 cups rice at a time), add a tablespoon of coconut oil and a sprinkle of sea salt. Cook on high for 5 minutes. Let sit for at least 10 minutes before opening.

And that's it. Easy peasy! My favorites are Jasmine and Basmati. But it doesn't matter what type you're cooking. Just remember to give it a vigorous bath and it will be light and fluffy every time!! Enjoy :)
